Differences in ethnic and national diets obviously have an impact on agriculture. Study of changing preferences are well worth studying and this library of Westphalia Press titles invites comparisons of fades and changing attitudes. An example is the emphasis on reducing sugar and salt in diets and the heightened preference for certain vegetables.
